During our self-guided Golden Circle tour, we stopped for lunch at the delicious Friðheimar, a eco-friendly greenhouse specializing in the sustainable cultivation of tomatoes year round (despite Iceland's dark, dark winters).  The staff provides a wonderful explanation upon arrival, and you are free to wander through the greenhouse at your leisure.  The restaurant features a simple menu of only 3-4 options.  We choose from unlimited tomato soup and bread, fresh pasta or a tortilla (we think that meant flatbread).  They also offer a variety of Bloody Mary's made with their homemade mixes - yum!  We all opted for the unlimited tomato soup.  For around $16, it did not disappoint - we were re-fueled for the remainder of our day.  

The property is also home to an equestrian center where you are welcome to pet the horses-- of course, we did --- or even catch a horse show in their 120-seat arena...

Now, what to wear while touring the Golden Circle....Layers!  I can't tell you how many times we took off our jackets, hats, glove once the car warmed up, only to put everything back on before we went to the next spot on our Golden Circle tour.  It was cold!  But clearly, it can get warm pretty quickly in a small car packed with 4 girls. The weather can change just as quickly so I recommend bringing a raincoat and some sort of waterproof footwear -- I'm glad I packed my Hunters at last minute.  We experienced rain, bright sunshine, overcast skies, a minor snow squall in the mountains, then back to sunshine.  So be prepared for literally anything.  I also took a baggu cube and microfiber cloth so I could store and clean my camera in the event we were stuck out in the elements longer than expected...
